Teaching Methods

The programmatic contents will be introduced in theoretical sessions of expository type, followed by sessions of interaction between students and lecturer that will include the analysis of case studies, press releases and scientific articles.  The thematic seminars (presential or remote) will be presented by invited speakers, including researchers and human resources working in the different areas addressed. In the theoretical-practical component, students will develop a group work that will result in the proposal of an innovative microbiological based solution.

Learning Outcomes

The course aims to provide students with a comprehensive overview of the application of microorganisms and microbial processes in food industry, biotechnology, agriculture and health. It is also intended that students understand emerging applications of microbiology, in 'one health' and global changes contexts. Finally, students are expected to develop the ability to propose new microbiologically-based applications in the areas addressed, understanding and analysing the risks associated with this application. In general terms it is intended that students integrate previous knowledge in microbiology, formulate questions and develop study and literature review strategies, increasing their autonomy and capacity for teamwork.

Thematic Units

A - Introduction to Applied Microbiology; Advanced methods for the prospecting of microbial products.

B - Industrial fermentation. Kinetics of microbial growth. Types of fermenters and fermentation systems. Scale-up of fermentative processes.

C - Microorganisms with industrial application; Production of biofuels, biopolymers and nanomaterials.

D - The role of microorganisms in food production; Microorganisms and food safety; Probiotics and food additives.

E - Plant microbiome; Growth promoting microorganisms; Manipulation of the soil microbiome in agro-ecosystems; Biopesticides and biofertilizers.

F - Antibiotics and other drugs of microbial origin; Emerging therapies based on the manipulation of the human microbiome.

G - Production of genetically modified microorganisms, their applications and associated risks.
